Twin Peaks-Worthy Cherry Pie with Trader Joe’s Ingredients

Just announced! David Lynch’s reboot of his classic TV series Twin Peaks arrives in 2017. If you have not yet seen this series, which originally aired in the 90s, check it out. It’s weird, it’s wonderful. Agent Dale Cooper is sent by the FBI to investigate a murder in a small Northwestern town. However, there is so much more … Like cherry pie. So in anticipation of the return of Twin Peaks, I present you with a near idiot-proof delicious cherry pie provided that you have a Trader Joe’s market nearby.

Trader Joe’s Morello Cherries and Trader Joe’s ready-made pie crusts make a damn good crust.

The all-vegetarian (no lard) crusts are already rolled out and need to simply be nestled into your pie pan. With two per package, one can be cut into strips for a lattice top. The entire process of making a pie took only about 15 minutes from opening to oven. Perfect flaky crust, not too-sweet cherries still bursting with flavor.

Twin Peaks-Worthy Cherry Pie Made with Trader Joe’s Ingredients

1 package Trader Joe’s Pie Crusts

2 jars Trader Joe’s Morello cherries, drained and juice reserved

3/4 cup sugar

2 1/2 tablespoons cornstarch

Pinch of salt

Squeezed juice of 1/2 lemon

3/4 cup juice reserved from cherries

Optional: 1 tablespoon of Earth Balance margarine OR 1 egg white and/or 1 teaspoon Turbinado sugar to coat crust before baking

Preheat oven to 350 F degrees. Unwrap crusts and place one in the bottom of a pie plate. Crimp edges all around. On a cutting board dusted with a little flour, lay the second crust down and cut it into vertical strips.

Open cherries and drain in a sieve or colander, reserve juice.

In a mixing bowl, add cherries, sugar, cornstarch, salt, lemon juice and 3/4 cup cherry juice. Toss together gently to distribute cornstarch over all.

Pour into the pie shell and top the shell with strips of the pie crust to create two layers, one vertical and one horizontal.

(Optional: Brush crust very lightly with melted Earth Balance margarine or beaten egg white and scatter with a teaspoon of Turbinado sugar to give the top a really golden hue and crunch.)

Place pie pan on a layer of tin foil over a cookie sheet or baking tray. (It may bubble over during baking so this will make cleanup easier.) Bake for 45 minutes to an hour or until crust is golden and filling is bubbly.

BTW, Trader Joe’s Morello Cherries are perfect for George Washington’s famous Cherry Bounce (a blend of brandy, cherry juice and spices that Martha packed away in his saddlebags to fuel his Revolutionary War campaigns). As it’s nearly President’s Day, this is the time to start a batch if you’d like to celebrate with this historical drink, recipe here.
